Simple Healthy Recipes for One

Stephanie Bostic is an avid cook, gardener and runner. Finding a lack of good recipes sized for one, she began her cookbook to fill a need for interesting and healthy recipes that serve the single cook. Her large cookbook collection, travels abroad, vegetable addiction, and love for homestyle cooking inspired the varied and delicious recipes found in One Bowl: Simple Healthy Recipes for One.

Raised in a vegetarian household, she developed a strong interest in food and nutrition at an early age. In fact, her mother still comments that a first-grader shouldn’t be lecturing her mother about not peeling carrots because the carrot peel is good for you. As an adult, she appreciates a well-peeled carrot but also works to balance the issue of food prep time with perfection. More often than not, she simply scrubs her carrots thoroughly in favor of quicker preparation.

Her interest in nutrition led her to the Friedman Graduate School of Nutrition, where Stephanie received her Master of Science in 2010. Since 2007, she has enjoyed working in nutrition research, first at Tufts University, and later at the Harvard School of Public Health.
